  • Proper Food Storage and Handling: Keeping food fresh and safely stored is vital when you run a food truck. You should maintain cold foods below 40 F and hot foods above 140 F. Also keep raw foods away from ready-to-eat items. 
  • Regular Equipment Maintenance: Your equipment is at the heart of your food truck operations. It’s important that they’re running properly and efficiently. You should complete weekly maintenance checks to make sure everything is running smoothly.
  • Establish Hygiene Protocols: It’s extremely important to have a hygienic food truck. Every food truck is required to have a fully operational handwashing station with hot water, soap, and disposable towels. It’s also required that all workers wear gloves and hairnets.
