Proof Pizza Truck is a family‑run mobile pizzeria operated by Jennifer and Lenny DeGirolomo of Fairfield, CT. Launched in 2019, the truck is powered by a custom, Italian-made wood-fired oven installed in a red-and-black vehicle that rolls out delicious, artisan-style pizzas across Sasco Beach and throughout Connecticut at events, farmers markets, private parties, weddings, and corporate functions . The couple, previously in banking and construction, turned their mutual passion for pizza into a culinary venture—handcrafting a dough “like our fifth baby” through iterations of flavor and resilience under truck‑life conditions.
