Founded by Lyon Lascu, the venture was inspired by his Dutch grandparents, who made these bite-sized treats for him and his cousins during childhood. After experiencing poffertjes firsthand in the Netherlands, Lyon returned to Buffalo and launched Dimples in 2017, initially serving customers at the historic Broadway Market. With the support of his grandfather, who helped build a stand, Lyon began sharing his love for these Dutch delicacies with the community. Over time, Dimples expanded its presence, and in 2024, Lyon transitioned to operating a full-time food truck, allowing the business to participate in various events and festivals throughout Western New York.
